Fred and Bex
Sweet chilli jam is the perfect partner for chicken, so here’s a quick and delicious recipe to whip up your own, using our fabulous Fred & Bex Raspberry Vinegar. The sweetness of the fruit is perfectly balanced by the fiery hit of the chilli, and served with scrumptiously savoury chicken drumsticks for a great sharing meal that everyone can eat with their fingers.
5-6 chicken drumsticks
Zest of half a lemon
For the dipping sauce:
1 small onion
1 fat clove of garlic
1 tbsp Fred & Bex Raspberry Vinegar
1 tbsp raspberry jam
1 tsp chopped chilli
Preheat the oven to 200C (180C fan). Rub the chicken with cumin and then pop into an ovenproof dish, drizzle with olive oil, and sprinkle with lemon zest and a little salt. Once the oven’s up to temperature, pop the chicken inside and set a timer for 45 minutes.
Next, prepare the chilli dipping sauce. Melt a generous scoop of butter in a frying pan on a medium heat, dice the onion and garlic as finely as you can, and then add to the pan. Keep it moving with a wooden spoon, for about five minutes, and then add the raspberry vinegar (vinegar will help soften up the onions, as well as adding a real punch of flavour) and fry for a few more minutes. When the liquid has reduced, add the jam, chilli, and a pinch each of salt and cumin. Stir well, turn the heat right down, and let it bubble gently for another ten minutes, stirring regularly to make sure it doesn’t stick. Transfer to a small bowl or jar and set aside to cool.
When the timer goes, the chicken should be crispy and pale golden. Bring straight to the table with the dipping sauce and let everyone dig in.
