FRENCH TOAST WITH BLUEBERRY CREAM


French toast is a fabulous weekend breakfast – not only delicious but indulgent and comforting too – and our Fred & Bex Blueberry Vinegar, whipped through a little double cream, provides the perfect slightly tart foil to the richness. I’ve cut the toast into soldiers and served the cream in an eggcup for dipping, but if you have a lot of guests, you could very easily just provide a plateful of toast and a bowlful of cream for people to serve themselves.





Ingredients

30g butter, plus more for frying

2 eggs

2 tsp granulated sugar, plus more for sprinkling

A generous sprinkling of ground cinnamon

2 tbsp plain flour

2 thick slices of white bread

100ml double cream

A splash of Fred & Bex Blueberry Vinegar

Makes 2 slices

Pop the butter into a bowl and microwave for 30 seconds, stir, and microwave for another 30 seconds. It should be mostly melted by now, so give it another brisk stir and the remaining lumps should disappear.

Crack the eggs into a wide, shallow bowl and beat them together, and then add the melted butter and whisk into a frothy pale yellow mixture. Add the granulated sugar and the cinnamon and whisk again. Then lay the slices of bread in the mixture, leaving them to soak for about 30 seconds before turning them over, and giving the other side another 30 seconds.

Pop a generous scoop of butter into a frying pan on a low/medium heat. While the butter melts, whip the cream, adding the Fred & Bex Blueberry Vinegar as you whisk, and keeping a close eye on the cream so that you don’t overwhip it. Set aside while you make the French toast.

Once the butter has melted completely, tilt the frying pan to coat as much of the surface as possible, and then carefully lay the slices of bread in the pan. Allow them to sizzle for about 2 minutes, without moving them, until the underside is crisp and golden. Turn them over with a spatula and give the other side another minute.

To serve, sprinkle the toast liberally with more granulated sugar, and then dish it up immediately while it’s still warm, with plenty of blueberry cream.
