Fred and Bex


It’s hard to beat a really good burger with some well-chosen toppings, and we think the combination of salty halloumi with a quick homemade onion relish (starring Fred & Bex Blackberry Vinegar) is the perfect partner for a beef burger.


For the burgers:

About 200g beef mince

A large handful of breadcrumbs

A pinch of cumin

A pinch of salt

For the relish:

1 red onion

2 tbsp Fred & Bex Blackberry Vinegar

1 fat garlic clove

1 tbsp brown sugar

1 tbsp smoked salt

To serve:

A couple of thick slices of halloumi

Start by making the onion relish. Peel the onion and use a sharp knife to cut into long, thin slices. Melt a generous scoop of butter in a saucepan and add the onions, plus the peeled and crushed garlic clove. Fry gently until the onions have softened.

Next, add the Fred & Bex Blackberry Vinegar, the sugar, and the smoked salt (you can leave this out if you can’t get any, but it is really good stuff). Stir until the sugar has dissolved, then leave on a low heat to simmer.

Next, make the burger mix. With clean, damp hands, mix together the mince, breadcrumbs, cumin and salt, and shape into two patties. Place a griddle pan on a high heat with a splash of oil, and carefully lay the homemade patties in it, flipping once the bottom side is cooked.

Finally, fry the slices of halloumi until golden and crispy on each side. To serve, top each burger with halloumi and a generous dollop of onion relish.
