Fred and Bex


Blueberries and white chocolate are a heavenly combination – the contrast between sweet and tart makes for the perfect treat. At this time of year, when blueberries start to come into season, you can add fresh ones, but you could also just make this with our scrumptious Fred & Bex Blueberry Vinegar for a great fruity flavour.


240ml double cream

1 can of condensed milk (usually around 400g)

2 large handfuls of fresh blueberries (optional)

3 tbsp Fred & Bex Blueberry Vinegar

100g white chocolate, cut into small chunks

Start by whipping the cream until soft ripples are starting to appear on the surface, and then add the blueberry vinegar and mix through gently. You’ll find that the cream thickens up straight away, but don’t worry – just add the condensed milk and whisk again, and the mixture should loosen up. Keep whisking hard until you get to the soft-peaks stage. A quick tip – I’d really recommend you use an electric whisk, because you’ll need serious muscles to do it by hand!

Next, add the blueberries and whisk again to combine, and then finally stir through the white chocolate. Transfer to a clean container and pop in the freezer for at least 24 hours. Serve with a scattering of fresh fruit for the ultimate summer cooler.
